Sugar-Free Apple Oat Scones

I saw a recipe for oat scones on the back of my Bob’s Red Mill steel cut oats and decided to adapt it to be sugar-free. These turned out amazing! It was my first time making scones and I’ll definitely be making them again.

1 cup steel cut oats

1 cup buttermilk

1 cup whole wheat flour

1/4 cup white flour

1 teaspoon baking soda

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup diced apples

4 tablespoons softened unsalted butter

Preheat oven to 350 degrees, place oats in a baking dish and brown for 20 minutes, stir frequently. While oats are browning, mix all dry ingredients. Cut butter into dry ingredients. Add apples.

Once oats are done, let cool in a bowl and add buttermilk. Let oats and buttermilk sit for 20 minutes.

Preheat oven to 400 degrees.

Stir oats into dry ingredients until the entire mix is wet. Grease cookie sheet with butter and form mixture into circle about 3/4 inch thick. Take a sharp knife and cut into 8 equal pieces, be sure not to cut the entire way through. Bake at 400 for 12-15 minutes.

Serve with honey drizzled over the scone.

The honey absolutely made these scones! I cannot wait to make these again.
